Hello,
Is there a way to export a list of all participants found in one or multiple .eaf?

Hello,

Both the single file and the multiple file annotation statistics windows have a Participant tab. The first column lists all participants found. The other columns are all about the number and duration etc. of annotations, but you can of course ignore those columns.
The single file function can be accessed via View->Annotation Statistics..., the multiple file variant via File->Multiple File Processing->Statistics for Multiple Files....
