Java 8 is only supported by and included in the experimental version based on JavaFX (ELAN 4.9.2 with JavaFX player).

Does the latest release ELAN 5.0.0 function well with Mac OS Sierra? If so, with Java 6 SE or with the latest Java 8? Thank you.

Yes, it does run on Sierra. All versions of ELAN, except for the JavaFX version, depend on Java 6. This is still true for ELAN 5.0.
